How to Roast Garlic

An easy way to prepare your own fresh roasted garlic. You can make more than you need and keep it on hand in the refrigerator for up to two weeks.

  1. Preheat the oven to 500°F.

  2. Without peeling, cut the top off each bulb of garlic that you want to roast. Make sure the tip of each clove gets removed.

  3. Place garlic bulbs cut-side up in the centre of a piece of aluminum foil and drizzle each with a ½ teaspoon of olive oil.

  4. Fold the aluminum foil to seal. Place in the oven on a baking sheet and roast until the the garlic is very tender, about 40 minutes.

  5. Allow the garlic to cool to a temperature that your fingers can tolerate. Squeeze the garlic cloves into a resealable container so that you can save any leftovers.

  6. Refrigerate in an air tight container or use in your favourite recipe.
