Preheat the oven to 500°F.
Without peeling, cut the top off each bulb of garlic that you want to roast. Make sure the tip of each clove gets removed.
Place garlic bulbs cut-side up in the centre of a piece of aluminum foil and drizzle each with a ½ teaspoon of olive oil.
Fold the aluminum foil to seal. Place in the oven on a baking sheet and roast until the the garlic is very tender, about 40 minutes.
Allow the garlic to cool to a temperature that your fingers can tolerate. Squeeze the garlic cloves into a resealable container so that you can save any leftovers.
Refrigerate in an air tight container or use in your favourite recipe.
